- In a large crock pot, brown the ground turkey over medium heat.
- Add chopped onion, carrots, celery, and garlic; sauté for 5-7 minutes until the vegetables soften.
- Add the 15 bean soup mix, broth, diced tomatoes, cumin, paprika, salt, pepper, and bay leaf to the crock pot.
- Stir everything together and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the bay leaf before serving.
Notes
Serve hot garnished with fresh herbs if desired. It pairs well with crusty bread or a simple side salad. For extra flavor, add a dollop of sour cream or a sprinkle of cheese.
