  • 1 lb ground turkey
  • 1 package 15 bean soup mix
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper

Preparation
  1. In a large crock pot, brown the ground turkey over medium heat.
  2. Add chopped onion, carrots, celery, and garlic; sauté for 5-7 minutes until the vegetables soften.
  3. Add the 15 bean soup mix, broth, diced tomatoes, cumin, paprika, salt, pepper, and bay leaf to the crock pot.
  4. Stir everything together and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Remove the bay leaf before serving.

Notes

Serve hot garnished with fresh herbs if desired. It pairs well with crusty bread or a simple side salad. For extra flavor, add a dollop of sour cream or a sprinkle of cheese.
