Stuffing Base
  • 1 bag (12 oz) dried bread cubes/stuffing mix
  • 1 cup chicken or turkey broth
  • 1/2 cup melted butter
  • 1 cup chopped celery
  • 1/2 cup chopped onion
Flavor & Bindings
  • 1/2 cup dried cranberries
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs lightly beaten

Method
 

Preparation
  1. In a large bowl, combine the dried bread cubes, chopped celery, chopped onion, dried cranberries, chopped parsley, poultry seasoning, salt, and pepper; mix well to distribute.
  2. In a separate small bowl, whisk together the chicken/turkey broth, melted butter, and lightly beaten eggs.
  3. Pour the wet mixture over the dry ingredients, mixing gently until just combined and all bread cubes are moistened. Cover and refrigerate for 30 minutes to firm the mixture.
Cooking
  1. Preheat oven to 375°F (190°C) and lightly grease a baking sheet. Form the chilled stuffing mixture into 1-inch balls, gently compressing each one.
  2. Place balls onto the prepared baking sheet, leaving space between each, then bake for 20-25 minutes until golden brown and heated through.

Notes

For extra crispiness, broil the stuffing balls for the last 2-3 minutes of cooking, watching carefully to prevent burning. These can be made ahead and reheated.
