Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll one sheet of puff pastry onto the prepared baking sheet.
  3. Evenly spread the basil pesto over the puff pastry, leaving a small border.
  4. Sprinkle the shredded mozzarella cheese over the pesto.
  5. Carefully place the second sheet of puff pastry on top, aligning the edges.
Assembly
  1. Using a sharp knife, cut the layered pastry into the shape of a Christmas tree with a trunk at the bottom.
  2. From the central "trunk" of the tree, cut horizontal strips on both sides, leaving the center intact.
  3. Twist each strip a few times to create "branches" for your tree.
  4. If desired, beat the egg and brush it lightly over the entire pastry tree for a golden finish.
Baking
  1. Bake for 18-22 minutes, or until the pastry is puffed, golden brown, and the cheese is melted and bubbly.
  2. Remove from the oven and let cool slightly before serving.
