  • 2 lbs Chicken breast cooked and shredded
  • 2 large Bell peppers sliced
  • 1 large Onion sliced
  • 2 tbsp Fajita seasoning
  • 1 can Cream of chicken soup 10.5 oz
  • 0.5 cup Milk
  • 2 cups Shredded cheddar cheese
  • 3 cups Tortilla chips crushed
  • 1 tbsp Olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté sliced bell peppers and onion in olive oil until they are tender.
  3. Combine the shredded chicken, sautéed vegetables, fajita seasoning, cream of chicken soup, and milk in a large mixing bowl.
  4. Stir in 1 cup of the shredded cheddar cheese.
Assembly and Baking
  1. Transfer the entire mixture into a 9x13 inch baking dish.
  2. Top the casserole with the remaining 1 cup of shredded cheddar cheese and the crushed tortilla chips.
  3. Bake for 30-35 minutes until the casserole is bubbly and the cheese is melted and golden brown.
  4. Allow the casserole to stand for 5 minutes before serving to let it set.
