Ingredients
  

For the pie
  • 1 pie crust 1 pie crust (store-bought or homemade) Use your favorite pie crust recipe or a store-bought version for convenience.
  • 2 cups 2 cups fresh strawberries, hulled and sliced Choose ripe, sweet strawberries for the best flavor.
For the filling
  • 1 cup 1 cup granulated sugar
  • 1/4 cup 1/4 cup cornstarch This will help thicken the filling.
  • 1 cup 1 cup water
  • 1 tablespoon 1 tablespoon lemon juice Adds brightness to the filling.
  • 1/4 teaspoon 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Pre-bake the pie crust according to the package instructions or your recipe. Allow it to cool.
  2. In a medium saucepan, combine the sugar, cornstarch, and salt. Gradually stir in the water and cook over medium heat, stirring constantly until the mixture thickens and boils.
  3. Remove from heat and stir in the lemon juice.
  4. Place the sliced strawberries in the cooled pie crust and pour the glossy filling over them.
Chilling
  1. Refrigerate the pie for at least 4 hours, or until set. Serve chilled.

Notes

Serve chilled for the best flavor and texture. Optionally, add whipped cream or vanilla ice cream on top. Store in the refrigerator for up to 3 days.
