Preparation
- Divide the ground beef into 8 equal portions and gently form them into loose balls; avoid overworking the meat. Prepare all your desired taco toppings by chopping and arranging them in separate bowls.
Cooking the Tacos
- Heat a large griddle or cast-iron skillet over medium-high heat, then add the vegetable oil. Place a beef ball on the hot surface, immediately top it with a tortilla, and firmly smash it flat with a sturdy spatula.
- Cook for 1-2 minutes until the burger is crispy and the tortilla is lightly browned. Carefully flip the burger-tortilla combination, immediately place a cheese slice on the hot burger, and cook for another 30-60 seconds until the cheese is melted and the tortilla is warmed.
- Remove the smash burger taco from the griddle and transfer it to a plate. Repeat the process with the remaining beef balls, tortillas, and cheese.
Assembly
- Assemble your tacos by adding shredded lettuce, diced onion, pickles, and a drizzle of burger sauce or your preferred condiments to each cheesy smash burger taco. Serve immediately and enjoy.
Notes
For extra flavor, lightly toast the tortillas directly on the griddle after cooking the burgers.
