  1. Peel and slice the peaches, then blend them in a blender or food processor until smooth.
  2. Add honey and lemon juice, and blend again until well combined.
  3. Pour the mixture into a shallow dish and freeze for about 2-3 hours or until firm.
  4. Stir the mixture every 30 minutes for a smoother texture.
  5. Once frozen, scoop and serve in bowls.

Notes

Store leftover sorbet in an airtight container in the freezer for up to a week. Let it sit at room temperature for a few minutes before serving to make it easier to scoop. You can garnish it with fresh mint leaves or serve it alongside cookies.
