Steps
- Heat olive oil in a large pot or Dutch oven over medium-high heat, then add chicken and cook until browned for 5-7 minutes. Remove chicken and set aside.
- Add onion to the pot and cook until softened for 3-5 minutes; stir in minced garlic and cook for 1 minute more until fragrant.
- Return chicken to the pot, then stir in chicken broth, rice, salt, pepper, and oregano; bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
- Fluff with a fork and garnish with fresh parsley, if desired, then serve immediately.
