  • 1/4 cup grated Parmesan cheese Optional, can omit for dairy-free.
  • 1 large egg Acts as a binder for the meatballs.
  • 2 cloves garlic, minced Fresh minced garlic for best flavor.
  • 1 tsp Italian seasoning Provides a herby flavor.
  • to taste Salt and pepper Adjust according to preference.
  • 1 tbsp olive oil For cooking the meatballs.
Curry Sauce Ingredients
  • 1 can coconut milk Full-fat coconut milk for richness.
  • 2 tbsp yellow curry powder Adjust amount based on spice preference.
  • 1 tbsp soy sauce Use gluten-free soy sauce if necessary.
  • to taste Chopped cilantro for garnish Optional, for added freshness.

Method
 

Preparation
  1. In a large bowl, mix the ground meat, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until combined.
  2. Form the mixture into small meatballs.
Cooking Meatballs
  1. Heat olive oil in a skillet over medium heat.
  2. Add the meatballs to the skillet and cook until golden brown on all sides, about 8-10 minutes.
Making the Curry Sauce
  1. In a separate saucepan, combine coconut milk, yellow curry powder, and soy sauce. Bring to a simmer and cook for 5 minutes.
  2. Pour the curry sauce over the meatballs in the skillet and allow to cook together for 5 more minutes.
Serving
  1. Serve warm, garnished with chopped cilantro.

Notes

These meatballs are best served warm, on a bed of steamed rice or with crusty bread. Can also add fresh vegetables or a salad for balance.
