Preparation
- In a large bowl, mix the ground meat, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until combined.
- Form the mixture into small meatballs.
Cooking Meatballs
- Heat olive oil in a skillet over medium heat.
- Add the meatballs to the skillet and cook until golden brown on all sides, about 8-10 minutes.
Making the Curry Sauce
- In a separate saucepan, combine coconut milk, yellow curry powder, and soy sauce. Bring to a simmer and cook for 5 minutes.
- Pour the curry sauce over the meatballs in the skillet and allow to cook together for 5 more minutes.
Serving
- Serve warm, garnished with chopped cilantro.
Notes
These meatballs are best served warm, on a bed of steamed rice or with crusty bread. Can also add fresh vegetables or a salad for balance.
