  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon rosemary, chopped Fresh rosemary recommended.
  • Salt and pepper to taste
  • Lemon wedges for serving To garnish the dish.

Preparation
  1. Preheat your grill or skillet over medium-high heat.
  2. In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and pepper.
  3. Rub the mixture on both sides of the lamb chops.
Cooking
  1. Grill or sear the chops for about 4-5 minutes on each side for medium-rare doneness.
  2. Remove from heat and let rest for a few minutes.
Serving
  1. Serve with lemon wedges.

Notes

Let lamb chops sit at room temperature before cooking for even results. Use a meat thermometer to check for doneness; the internal temperature for medium-rare should be around 145°F (63°C). Don't skip the resting time after cooking for a more tender bite.
