  • 1 lb ground beef Ensure that the fat is drained after cooking.
  • 1 can Rotel tomatoes (with green chilies)
  • 8 oz cream cheese Cut into chunks for easier melting.
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the Rotel tomatoes to the skillet and stir well.
  3. Cut the cream cheese into chunks and add to the skillet, stirring until melted and mixed in.
  4. Stir in the shredded cheddar cheese until melted and combined.
  5. Season with garlic powder, onion powder, salt, and pepper.
Serving
  1. Serve warm with low-carb chips or fresh vegetables such as celery sticks or cucumber slices.

Notes

Make sure to drain the ground beef well after cooking to keep the dip from being greasy. For added flavor, you can add hot sauce or diced jalapeƱos. For a thicker dip, let it simmer for a few extra minutes.
