  • 1 box Jiffy Corn Muffin Mix
  • 1 can whole kernel corn, drained
  • 1 can cream style corn
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese (optional) Add for extra flavor
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, cream style corn, sour cream, melted butter, and cheddar cheese if using. Mix until well combined.
  3. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  2. Let it cool slightly before serving.

Notes

To store leftovers, let the casserole cool completely. Place it in an airtight container and refrigerate. It will stay fresh for about 3-4 days. You can also freeze it for longer storage, and it will keep well for up to 2 months.
