- In a mixing bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, cream style corn, sour cream, melted butter, and cheddar cheese if using. Mix until well combined.
- Pour the mixture into a greased baking dish.
Baking
- Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let it cool slightly before serving.
Notes
To store leftovers, let the casserole cool completely. Place it in an airtight container and refrigerate. It will stay fresh for about 3-4 days. You can also freeze it for longer storage, and it will keep well for up to 2 months.
