- In a food processor, combine the medjool dates, nut butter, rolled oats, cocoa powder, coconut oil, maple syrup, and vanilla extract. Blend until smooth and well combined.
- Line a small baking dish with parchment paper and press the mixture evenly into the bottom of the dish to form a base layer.
- Sprinkle chopped nuts over the base layer and press down gently.
- Melt the vegan chocolate chips and pour over the nut layer, spreading evenly.
- Refrigerate for at least 2 hours or until set. Cut into bars and enjoy!
Notes
These bars can be served as a snack, dessert or sweet treat for gatherings. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Separate layers with parchment paper to prevent sticking.
