Ingredients
  

Base Layer Ingredients
  • 1 cup medjool dates, pitted Make sure they are soft and moist.
  • 1/2 cup natural nut butter (e.g., almond or peanut) Can substitute with sunflower seed butter for nut-free.
  • 1/2 cup rolled oats
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil Melted.
  • 1/4 cup maple syrup Can substitute with agave nectar or honey.
  • 1/2 teaspoon vanilla extract
Topping Ingredients
  • 1/2 cup vegan chocolate chips Melted.
  • 1/4 cup chopped nuts (e.g., peanuts or almonds) Can use various nuts.
  • to taste pinch sea salt

Method
 

Preparation
  1. In a food processor, combine the medjool dates, nut butter, rolled oats, cocoa powder, coconut oil, maple syrup, and vanilla extract. Blend until smooth and well combined.
  2. Line a small baking dish with parchment paper and press the mixture evenly into the bottom of the dish to form a base layer.
  3. Sprinkle chopped nuts over the base layer and press down gently.
  4. Melt the vegan chocolate chips and pour over the nut layer, spreading evenly.
  5. Refrigerate for at least 2 hours or until set. Cut into bars and enjoy!

Notes

These bars can be served as a snack, dessert or sweet treat for gatherings. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Separate layers with parchment paper to prevent sticking.
