  • 500 g Chicken breast boneless, skinless, cut into cubes
  • 1/2 cup Sweet chilli sauce
  • 2 tbsp Soy sauce
  • 1 tbsp Fresh ginger grated
  • 2 Garlic cloves minced
  • 1 tbsp Vegetable oil
  • 1 tbsp Cornstarch
  • 2 tbsp Water for cornstarch slurry
  • 2 Green onions sliced, for garnish (optional)
  • 1 tsp Sesame seeds for garnish (optional)

Preparation
  1. Prepare the chicken by cutting it into bite-sized pieces and patting dry. In a small bowl, whisk together sweet chilli sauce, soy sauce, grated ginger, and minced garlic.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through.
  3. Pour the prepared sweet chilli sauce mixture over the chicken. In a separate small bowl, mix cornstarch with water to create a slurry, then add it to the pan.
  4. Stir constantly until the sauce thickens and coats the chicken. Serve immediately over rice, garnished with green onions and sesame seeds if desired.

Notes

For extra crispiness, you can lightly coat the chicken in cornstarch before pan-frying. Adjust the amount of sweet chilli sauce to your preferred level of spiciness.
