Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1.5 Tbsp baking powder (aluminum-free)
  • 1 tsp granulated sugar
  • 0.75 tsp salt (fine sea salt)
Wet Ingredients
  • 1/2 cup unsalted butter (cold, 8 Tbsp = 1/2 cup)
  • 1 cup half and half (minus 2 Tbsp)
  • 1/2 Tbsp melted butter (to brush the baked biscuits)

Method

Make the Biscuit Dough
  1. In a large bowl, mix together the flour, baking powder, sugar, and salt.
  2. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
  3. Pour in the half and half, leaving out 2 tablespoons. Stir until the dough forms, but do not overmix.
Fold Dough and Cut Biscuits
  1. Lightly flour a clean surface and turn the dough out onto it.
  2. Gently fold the dough a few times to create layers.
  3. Pat the dough down to about 1-inch thick, then use a biscuit cutter to cut out biscuits.
Bake Biscuits
  1. Preheat your oven to 425°F (220°C).
  2. Place biscuits on a baking sheet. Brush the tops with melted butter.
  3. Bake for 12-15 minutes or until golden brown.

Notes

Use cold butter for fluffy biscuits. Avoid overmixing the dough for the best texture. For extra flaky biscuits, fold the dough several times before cutting.
