- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden and cooked through. Remove from the pan and set aside.
- In the same pan, add minced garlic and sauté for about 30 seconds until fragrant.
- Add fresh spinach and cook until wilted.
- Pour in heavy cream, stirring to combine, and let simmer for 2-3 minutes.
- Return chicken to the pan and spoon the creamy spinach sauce over the chicken.
- Let everything simmer for another 2-3 minutes.
- Serve hot, garnished with grated Parmesan if desired.
Notes
To store leftovers, let the chicken cool completely. Place it in an airtight container and refrigerate. It will stay fresh for up to 3 days. For longer storage, you can freeze it for up to 3 months. Reheat in the oven or microwave until heated through. Feel free to add other vegetables like mushrooms or bell peppers. Experiment with different cheeses for topping.
