  • 1 cup Unsalted butter softened
  • 1 ½ cups Granulated sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 2 ¾ cups All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
Frosting
  • 3 cups Powdered sugar
  • ½ cup Unsalted butter softened
  • 3-4 tablespoons Milk
  • 1 teaspoon Vanilla extract
  • Salt Pinch of
  • Christmas sprinkles for decorating

Method
 

Cookie Bars
  1. Preheat oven to 375°F (190°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Press the dough evenly into the prepared baking pan. Bake for 18-22 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  5. Let the bars cool completely in the pan on a wire rack before frosting.
Frosting
  1. In a medium bowl, beat softened butter until creamy. Gradually add powdered sugar, mixing until smooth.
  2. Add milk and vanilla extract, beating until the frosting reaches a smooth and spreadable consistency. If too thick, add more milk; if too thin, add more powdered sugar.
  3. Once the cookie bars are completely cool, spread the frosting evenly over them and immediately decorate with Christmas sprinkles.
  4. Cut into bars and serve.

Notes

For best results, ensure your butter and eggs are at room temperature. Don't overbake the bars to keep them soft and chewy.
