Ingredients

  • 400 g Chicken thighs (cut into small pieces)
  • 2 cup scallion (chopped)
  • 4 tablespoon oil For frying
  • 2 tablespoon soy sauce Regular soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon black pepper powder Adjust to spice preference
  • 2 tablespoon corn starch

Method
 

Preparation
  1. Mix the chicken thighs with soy sauce, oyster sauce, pepper, and corn starch. Marinate for 10 minutes.
  2. Meanwhile, cut the scallions, separating the white parts from the green parts.
Pan Frying Chicken
  1. Add the chicken pieces to a non-stick pan with oil over medium heat. Pan fry until fully cooked.
Adding Scallions
  1. Add the white parts of the scallions to the chicken and cook until softened.
  2. If using larger chicken pieces or pieces with bones, cover the pan with a lid and cook until the chicken is thoroughly cooked.
  3. Finally, add the green parts of the scallions and stir for 10-20 seconds to cook them.
Serving
  1. Sprinkle more pepper powder or scallions if desired and serve with rice or noodles.

Notes

Use fresh scallions for the best taste. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and frozen for up to one month.
