Preparation
- Preheat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, stir together the mashed bananas, coconut oil, honey, eggs, and vanilla.
- Add the flour, cocoa powder, baking soda, and salt, mixing until just combined.
- Fold in the chocolate chunks.
- Pour the batter into the prepared pan.
Baking
- Bake for 50–55 minutes, or until the center is just set.
- Remove from the oven and top with extra chocolate chunks if desired.
- Let it cool for 1 hour before slicing.
Notes
Double Chocolate Banana Bread tastes great served warm or at room temperature. You can enjoy it plain or with a bit of butter or cream cheese. Store in an airtight container for up to 3 days at room temperature, or wrap in plastic and refrigerate for about a week. It can also be frozen for up to 3 months.
