  • 4 medium overly ripe bananas, mashed (about 1 1/4 cup mashed) Ensure bananas are overly ripe for the best flavor.
  • 1/4 cup melted coconut oil Can substitute with melted butter or vegetable oil.
  • 1/2 cup honey or granulated sugar Can reduce for a less sweet version.
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped chocolate chunks, plus more for topping Feel free to mix in nuts or additional chocolate chips for added texture.

Preparation
  1. Preheat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, stir together the mashed bananas, coconut oil, honey, eggs, and vanilla.
  3. Add the flour, cocoa powder, baking soda, and salt, mixing until just combined.
  4. Fold in the chocolate chunks.
  5. Pour the batter into the prepared pan.
Baking
  1. Bake for 50–55 minutes, or until the center is just set.
  2. Remove from the oven and top with extra chocolate chunks if desired.
  3. Let it cool for 1 hour before slicing.

Notes

Double Chocolate Banana Bread tastes great served warm or at room temperature. You can enjoy it plain or with a bit of butter or cream cheese. Store in an airtight container for up to 3 days at room temperature, or wrap in plastic and refrigerate for about a week. It can also be frozen for up to 3 months.
