  • 1.5 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 cups dill pickle juice
  • 1 cup dill pickle ranch dressing, divided plus more for dipping
  • 8-10 units wooden skewers, soaked in water soak for 30 minutes before use
  • fresh dill to taste chopped for garnish
Seasoning
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika

Method
 

Preparation
  1. In a large bowl, add chicken pieces and dill pickle juice. Cover and refrigerate overnight or for at least 8 hours.
  2. In a separate bowl, whisk together salt, pepper, garlic powder, onion powder, and paprika. Add marinated chicken and toss to coat.
  3. Thread the seasoned chicken onto soaked wooden skewers.
  4. Brush the chicken generously with ½ cup of dill pickle ranch dressing. Reserve the remaining dressing for later.
Cooking
  1. Preheat the air fryer to 400°F and lightly spray the basket with nonstick spray.
  2. Add skewers to the basket in a single layer. Work in batches if necessary.
  3. Air fry for 11-12 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F.
  4. Brush cooked chicken with reserved dill pickle ranch dressing and serve with extra dressing for dipping.
  5. Garnish with fresh dill.

Notes

For best results, marinate the chicken overnight. Soak skewers to prevent burning in the air fryer. Adjust spices to taste. Can add vegetables like bell peppers or cherry tomatoes for added flavor.
