  • 1 Pre-made pie crust (9-inch)
Filling
  • 1 tbsp Olive oil
  • 5 oz Fresh spinach (roughly 5 cups packed)
  • 0.5 cup Onion chopped
  • 3 Large eggs
  • 1.5 cups Milk (whole or 2%)
  • 0.5 cup Crumbled feta cheese
  • 0.25 tsp Salt
  • 0.125 tsp Black pepper
  • 0.125 tsp Nutmeg (optional, ground)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and place the pie crust into a 9-inch pie dish, then flute the edges.
  2. In a skillet, heat 1 tbsp olive oil over medium heat, sauté chopped onion until softened, then add spinach and cook until wilted, squeezing out excess liquid.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and optional nutmeg until well combined.
  4. Spread the cooked spinach and onion mixture evenly over the bottom of the pie crust, then sprinkle with the crumbled feta cheese, and pour the egg mixture over.
  5. Bake for 35-45 minutes, or until the center is set and a knife inserted near the center comes out clean.
  6. Let the quiche cool for 10-15 minutes before slicing and serving.

Notes

For a golden brown crust, you can cover the edges with foil during the last 10-15 minutes of baking. Allow the quiche to cool for at least 10 minutes before slicing to ensure it sets properly.
