Ingredients
  

For the tartlet shells
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed Make sure the butter is cold for a flakier crust.
  • 1 large egg yolk
  • 1-2 tbsp cold water
For the mascarpone filling
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
For the topping
  • 1 cup fresh strawberries, hulled and sliced Use fresh strawberries for the best flavor.
  • to taste mint leaves (optional, for garnish)
  • to taste additional powdered sugar (for dusting)

Method
 

Prepare the Tartlet Shells
  1. In a bowl, combine the flour and powdered sugar.
  2. Cut in the cold, cubed butter until the mixture looks like coarse crumbs.
  3. Add the egg yolk and cold water, mixing until the dough forms.
  4. Roll out the dough and fit it into tartlet pans.
  5. Chill for 30 minutes.
  6. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until golden.
  7. Let them cool completely.
Prepare the Mascarpone Filling
  1. In another bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
Assemble the Tartlets
  1. Spoon the mascarpone filling into the cooled tartlet shells.
  2. Top with sliced strawberries and add mint leaves if desired.
  3. Dust with more powdered sugar before serving.

Notes

Serve these tartlets chilled for the best flavor. Avoid adding powdered sugar or garnishing with mint leaves until ready to serve.
