Preparation
- In a mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt until the mixture is smooth.
- Stir in the crushed peanuts to add a crunchy texture.
- Line a baking sheet with parchment paper to prevent sticking.
- Spoon small dollops of the mixture onto the parchment paper, leaving space between each dollop.
- Freeze for at least 2 hours or until the bites are solid.
Serving
- Serve straight from the freezer in a bowl or on a plate.
- Optional: Drizzle with chocolate or sprinkle more crushed peanuts on top just before serving.
Notes
To store, place bites in an airtight container in the freezer for up to three months. Separate layers with parchment paper to prevent sticking.
