For the Potatoes
  • 1 pound potatoes Peel and dice before boiling
  • 1/2 cup heavy cream Reduce for a lighter version
  • 1/2 cup grated Parmesan cheese Can adjust cheese amount based on preference
  • 2 cloves garlic, minced Add more for a stronger flavor

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Dip each chicken breast into honey BBQ sauce, then coat with breadcrumbs.
  3. Place the coated chicken on a baking sheet and drizzle with olive oil.
  4. Peel and dice the potatoes, then boil until tender, about 15 minutes.
Cooking
  1. Bake the chicken for 25-30 minutes until cooked through and crispy.
  2. Drain the potatoes and return them to the pot. Add heavy cream, Parmesan cheese, minced garlic, salt, and pepper.
  3. Mash the potatoes until creamy.
Serving
  1. Serve the chicken with creamy garlic Parmesan potatoes on the side.
  2. Garnish chicken with fresh parsley if desired.
