  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 can diced tomatoes 14.5 oz can recommended
  • 2 cups beef broth Can substitute with chicken or vegetable broth
  • 2 cups elbow macaroni Whole wheat option is available
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. In a skillet, brown the ground turkey over medium heat. Drain any excess fat.
  2. Add the chopped onion, garlic, and bell pepper, cooking until softened.
  3. Transfer the mixture to the crockpot.
Cooking
  1. Add diced tomatoes, beef broth, elbow macaroni, Italian seasoning, salt, and pepper. Stir to combine.
  2. Cover and cook on low for about 6 hours or on high for 3 hours.
Serving
  1. Before serving, sprinkle with cheddar cheese if desired.

Notes

For added nutrition, feel free to incorporate more vegetables like carrots or peas. For spice, consider adding red pepper flakes or hot sauce. Stir halfway through cooking for even flavor distribution.
