  • 4 pieces chicken breasts
  • 1 cup heavy cream
  • 1 piece lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • as needed Chopped parsley for garnish

Method
 

Preparation
  1. In a bowl, mix together the heavy cream, lemon zest, lemon juice, minced garlic, thyme, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken breasts until golden brown on both sides.
  3. Transfer the chicken to a crock pot and pour the creamy lemon mixture over the top.
  4. Add chicken broth to the crock pot.
  5. Cook on low for 4-6 hours or until the chicken is cooked through and tender.
  6. Garnish with chopped parsley before serving.

Notes

Serve the creamy lemon chicken over rice or mashed potatoes. It's great with steamed green beans or a fresh salad. Chicken can also be stored in an airtight container for up to three days in the refrigerator, or frozen for up to three months.
