- In a bowl, mix together the heavy cream, lemon zest, lemon juice, minced garlic, thyme, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the chicken breasts until golden brown on both sides.
- Transfer the chicken to a crock pot and pour the creamy lemon mixture over the top.
- Add chicken broth to the crock pot.
- Cook on low for 4-6 hours or until the chicken is cooked through and tender.
- Garnish with chopped parsley before serving.
Notes
Serve the creamy lemon chicken over rice or mashed potatoes. It's great with steamed green beans or a fresh salad. Chicken can also be stored in an airtight container for up to three days in the refrigerator, or frozen for up to three months.
