Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut the zucchinis into fry-shaped pieces.
Breading
  1. In one bowl, beat the eggs.
  2. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Dip each zucchini fry first into the egg, then coat it with the breadcrumb mixture.
Baking
  1. Place the coated fries on a baking sheet lined with parchment paper.
  2. Spray the fries lightly with cooking spray.
  3. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
