Delicious and healthy falafel melts served in pita breads with greens, cucumbers, and drizzled with garlicky green tahini.

Ingredients
  

For the Falafel
  • 1 can chickpeas, drained and rinsed
  • 1/2 onion chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp tahini
  • 1 tbsp sesame seeds
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp baking powder
  • 4 pieces pita breads
  • 1 cup greens (like spinach or arugula)
  • 1/2 cup sliced cucumbers
  • 1/2 cup tomatoes, diced
For the Garlicky Green Tahini
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1/2 lemon juiced
  • Water to thin

Method
 

Preparation
  1. In a food processor, combine chickpeas, onion, garlic, parsley, tahini, sesame seeds, cumin, salt, pepper, and baking powder. Blend until a coarse mixture forms.
  2. Form the mixture into small balls or patties.
Cooking
  1. Heat oil in a pan over medium heat and fry the falafel until golden and crispy.
  2. While falafel cooks, prepare the Garlicky Green Tahini by blending tahini, olive oil, garlic, lemon juice, and adding water until the desired consistency.
Serving
  1. Serve the crispy falafel in pita breads, topped with greens, cucumbers, and tomatoes, drizzled with Garlicky Green Tahini.

Notes

These falafel melts are best served warm, straight from the pan. Store leftovers separately in the fridge for up to 3 days. Reheat falafel to regain crispiness.
