  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 count lemon for serving
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Pat the salmon fillets dry thoroughly with paper towels to ensure a crispy crust.
Coating the Salmon
  1. In a shallow dish, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, salt, and black pepper. Drizzle each salmon fillet with olive oil, then press both sides firmly into the Parmesan mixture to coat them completely.
Baking
  1. Place the coated salmon fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through, flakes easily with a fork, and the Parmesan crust is golden brown and crispy.
Serving
  1. Garnish the baked salmon with fresh chopped parsley and serve immediately with lemon wedges on the side.

Notes

For an even crispier crust, you can briefly broil the salmon for the last 1-2 minutes; watch it carefully to prevent burning. Feel free to adjust the seasonings to your personal preference.
