Ingredients
  

For the Chicken
  • 4 pieces boneless chicken thighs or breasts
  • 1 cup panko breadcrumbs
  • 1 cup flour
  • 2 pieces eggs, beaten
  • Vegetable oil as needed for frying
For the Noodles and Sauce
  • 3 cups cooked noodles (uchūmen or soba)
  • ½ cup mayonnaise
  • 2 tablespoons sriracha (or to taste)
For Garnish

Preparation
  1. Prepare your chicken by flattening it slightly for even cooking. Season with salt and pepper.
  2. Set up a breading station: one plate with flour, one with beaten eggs, and another plate for panko breadcrumbs.
  3. Dip each chicken piece in flour, then egg, and coat with panko breadcrumbs.
Cooking
  1. Heat vegetable oil in a pan over medium heat and fry the chicken until golden brown and cooked through, about 4-5 minutes per side.
  2. Meanwhile, cook the noodles according to package instructions.
Assembly
  1. In a small bowl, mix mayonnaise with sriracha to create a spicy dipping sauce.
  2. Assemble the bowls: add a portion of noodles, top with sliced chicken katsu, drizzle with soy sauce, and add the spicy mayo.
  3. Garnish with chopped green onions and sesame seeds before serving.

Notes

Serve immediately after assembling for the best texture. Offer extra soy sauce and spicy mayo on the side for more flavor. Store leftovers in an airtight container, best eaten within a day or two.
