  • 1.5 lbs Small potatoes (e.g., Yukon Gold or red) scrubbed
  • 1/4 cup Olive oil
  • 4 cloves Garlic minced
  • 1/2 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley for garnish, optional
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Method
 

Preparation
  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
  2. Drain the potatoes thoroughly and let them cool slightly.
  3. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
  4. Place the boiled potatoes on the prepared baking sheet and gently smash each one flat with a potato masher or the bottom of a glass.
  5. In a small bowl, whisk together olive oil, minced garlic, salt, and black pepper.
  6. Brush the olive oil mixture evenly over each smashed potato.
  7. Sprinkle the grated Parmesan cheese over the potatoes.
  8. Bake for 30-40 minutes, or until golden brown and crispy.
  9. Garnish with fresh parsley before serving, if desired.

Notes

For extra crispiness, ensure potatoes are thoroughly dry before smashing and roasting. Don't overcrowd the baking sheet.
