Preparation
- Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes thoroughly and let them cool slightly.
- Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- Place the boiled potatoes on the prepared baking sheet and gently smash each one flat with a potato masher or the bottom of a glass.
- In a small bowl, whisk together olive oil, minced garlic, salt, and black pepper.
- Brush the olive oil mixture evenly over each smashed potato.
- Sprinkle the grated Parmesan cheese over the potatoes.
- Bake for 30-40 minutes, or until golden brown and crispy.
- Garnish with fresh parsley before serving, if desired.
Notes
For extra crispiness, ensure potatoes are thoroughly dry before smashing and roasting. Don't overcrowd the baking sheet.
