Ingredients
  

Vegetables
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 3 cups mixed vegetables (e.g., broccoli, bell peppers, zucchini)
Liquids
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk Use coconut milk for a vegan version.
Seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
Cooking
  1. Add mixed vegetables and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  2. Use an immersion blender to puree the soup until smooth (or blend in batches).
  3. Stir in heavy cream or coconut milk, then season with salt and pepper.
  4. Cook for an additional 5 minutes, then serve hot.

Notes

Serve topped with fresh herbs, croutons, or cheese. Pairs well with crusty bread or a salad. For extra flavor, add herbs like thyme or bay leaves. Adjust thickness by adding more or less liquid.
