  • 8 oz pasta Any type of pasta such as fettuccine or penne.
  • 1 cup heavy cream Can substitute with coconut cream for dairy-free.
  • 1/2 cup grated Parmesan cheese Can replace with nutritional yeast for a dairy-free option.
  • 1/4 cup sun-dried tomatoes, chopped Jarred sun-dried tomatoes can be used.
  • 2 cups fresh spinach You can substitute with kale or arugula.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Cooking
  1. Stir in the sun-dried tomatoes and cook for about 2 minutes.
  2. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  3. Add fresh spinach and cook until just wilted.
  4. Mix in the cooked pasta and season with salt and pepper to taste.
Serving
  1. Serve immediately, garnished with additional Parmesan if desired.

Notes

This dish pairs well with a light salad or garlic bread. For added flavor, consider adding red pepper flakes.
