Prep & Sear Chicken
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat, then sear chicken for 4-5 minutes per side until golden brown. Remove chicken from the skillet and set aside.
Make the Creamy Sauce
- In the same skillet, melt butter over medium heat and sauté chopped onion for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Stir in flour and cook for 1 minute, creating a roux. Gradually whisk in chicken broth until smooth, then bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Reduce heat to low, stir in heavy cream and dried thyme, mixing until the sauce is smooth and heated through.
Smother & Serve
- Return the seared chicken breasts to the skillet, spooning the creamy sauce over them. Cover and simmer for 5-7 minutes, or until chicken is cooked through and tender.
- Garnish with fresh chopped parsley before serving.
Notes
For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sauce. Serve over mashed potatoes, rice, or pasta to soak up all the delicious sauce.
