Creamy Smothered Chicken

Ingredients
  

Chicken
  • 4 Boneless, skinless chicken breasts
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil
Creamy Sauce
  • 2 tbsp Butter
  • 0.5 Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp All-purpose flour
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 tsp Dried thyme
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Prep & Sear Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat, then sear chicken for 4-5 minutes per side until golden brown. Remove chicken from the skillet and set aside.
Make the Creamy Sauce
  1. In the same skillet, melt butter over medium heat and sauté chopped onion for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  2. Stir in flour and cook for 1 minute, creating a roux. Gradually whisk in chicken broth until smooth, then bring to a simmer and cook for 2-3 minutes until slightly thickened.
  3. Reduce heat to low, stir in heavy cream and dried thyme, mixing until the sauce is smooth and heated through.
Smother & Serve
  1. Return the seared chicken breasts to the skillet, spooning the creamy sauce over them. Cover and simmer for 5-7 minutes, or until chicken is cooked through and tender.
  2. Garnish with fresh chopped parsley before serving.

Notes

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sauce. Serve over mashed potatoes, rice, or pasta to soak up all the delicious sauce.
