Ingredients
  

Pasta and Shrimp
  • 8 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined For best flavor, use fresh shrimp.
Sauce Ingredients
  • 2 cups heavy cream Can use half-and-half for a lighter version.
  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper flakes Adjust for spice preference.
  • 1/2 tsp paprika
  • to taste Salt and pepper
  • as needed Olive oil for cooking

Method
 

Pasta Preparation
  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
Cooking Shrimp and Sauce
  1. In a large skillet, heat olive oil over medium heat. Add the shrimp and cook until pink, about 3 minutes. Remove and set aside.
  2. In the same skillet, add sliced mushrooms and cook until tender.
  3. Add minced garlic and cook for another minute.
  4. Pour in the heavy cream and stir in the Parmesan and Mozzarella cheeses until melted and smooth.
  5. Season with basil, crushed red pepper, paprika, salt, and pepper.
  6. Toss the cooked pasta and shrimp in the sauce, combining well.
Serving
  1. Serve hot, garnished with extra cheese and herbs if desired.

Notes

If you have leftovers, let the pasta cool completely, then store it in an airtight container in the refrigerator for up to 2-3 days. To reheat, add a splash of milk or cream to loosen the sauce and warm it gently.
