  • 4 cups corn (fresh or frozen) For best flavor, use fresh corn in season.
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese Feta cheese can be used as an alternative.
  • 2 tablespoons lime juice Adjust to taste before serving.
  • 1 teaspoon chili powder Adjust based on spice preference.
  • Salt to taste
  • Chopped cilantro for garnish
  • Lime wedges for serving For a zesty kick.

Preparation
  1. In a large bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, and salt. Adjust seasoning to taste.
  2. If using fresh corn, grill or boil it until cooked, then cut the kernels off the cob. If using frozen corn, cook according to package instructions.
  3. Add the corn to the mayonnaise mixture and stir until well combined.
  4. Fold in the crumbled cotija cheese.
Serving
  1. Serve in cups, garnished with chopped cilantro and extra lime wedges on the side.

Notes

For storage, keep in an airtight container in the refrigerator for up to 3 days. Stir and add a bit of extra lime juice if needed before serving. You can make the dish ahead of time, just add cilantro and lime wedges just before serving for optimal freshness.
