- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, then remove and set aside.
- Reduce heat to medium, add minced garlic to the skillet, and cook for about 1 minute until fragrant.
- Pour in chicken broth and heavy cream, bringing the mixture to a gentle simmer. Stir in grated Parmesan cheese until melted and smooth.
- Add the gnocchi to the simmering sauce and cook according to package directions, usually 2-3 minutes, until tender. Return the cooked chicken to the skillet.
- Stir in fresh spinach until it wilts into the sauce. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley if desired.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the garlic. Fresh parsley makes a great garnish.
