  • 2 Chicken breasts boneless, skinless, cut into 1-inch pieces
  • 1 tbsp Olive oil
  • 4 cloves Garlic minced
  • 1/2 cup Chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese grated
  • 16 oz Gnocchi package
  • 2 cups Spinach fresh
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, then remove and set aside.
  2. Reduce heat to medium, add minced garlic to the skillet, and cook for about 1 minute until fragrant.
  3. Pour in chicken broth and heavy cream, bringing the mixture to a gentle simmer. Stir in grated Parmesan cheese until melted and smooth.
  4. Add the gnocchi to the simmering sauce and cook according to package directions, usually 2-3 minutes, until tender. Return the cooked chicken to the skillet.
  5. Stir in fresh spinach until it wilts into the sauce. Season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh parsley if desired.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. Fresh parsley makes a great garnish.
