Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for a quicker option.
  • 4 cups fresh spinach Frozen spinach can be used if thawed and drained well.
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or pepper jack.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup cooked rice or pasta (optional) Mix if using for added heartiness.
  • 1/2 cup breadcrumbs (optional, for topping) Use for extra crunch.

Method
 

Preparation and Assembly
  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, combine the shredded chicken, fresh spinach, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper.
  3. If using, mix in the cooked rice or pasta until well combined.
  4. Transfer the mixture into a greased casserole dish.
  5. Sprinkle the shredded cheddar cheese on top.
  6. If desired, add breadcrumbs for an extra crunch.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until heated through and bubbly.
  2. Allow to cool slightly before serving.

Notes

This casserole can be stored in the refrigerator for 3-4 days or frozen for up to 3 months. Thaw in the refrigerator overnight before reheating. It's great for meal prep and can be customized with additional vegetables for more flavor and nutrition.
