Preparation
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is soft, about 5 minutes.
- Add the ground beef or sausage to the pot and cook until browned. Drain any excess fat.
Cooking
- Pour in the chicken broth and bring to a simmer. Let it cook for about 10 minutes.
- Stir in the heavy cream and Parmesan cheese, mixing well until the cheese is melted and the soup is creamy.
- Add the fresh spinach and cooked lasagna noodles to the pot. Cook for another 5 minutes until the spinach is wilted.
- Season with salt and pepper to taste. If desired, garnish with fresh basil before serving.
Notes
For a richer flavor, use homemade chicken broth. Feel free to add other vegetables like mushrooms or bell peppers for added nutrition. For a vegetarian version, skip the meat and add more vegetables and some beans for protein. Always taste and adjust the seasoning at the end for the best flavor.
