Preparation
  1. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is soft, about 5 minutes.
  3. Add the ground beef or sausage to the pot and cook until browned. Drain any excess fat.
Cooking
  1. Pour in the chicken broth and bring to a simmer. Let it cook for about 10 minutes.
  2. Stir in the heavy cream and Parmesan cheese, mixing well until the cheese is melted and the soup is creamy.
  3. Add the fresh spinach and cooked lasagna noodles to the pot. Cook for another 5 minutes until the spinach is wilted.
  4. Season with salt and pepper to taste. If desired, garnish with fresh basil before serving.

Notes

For a richer flavor, use homemade chicken broth. Feel free to add other vegetables like mushrooms or bell peppers for added nutrition. For a vegetarian version, skip the meat and add more vegetables and some beans for protein. Always taste and adjust the seasoning at the end for the best flavor.
