Salad Base
  • 1 can Cranberry Sauce, whole (14 oz)
  • 1 can Pineapple, crushed, undrained (20 oz)
  • 1 package Cherry Jell-O powder (3 oz)
  • 1 cup Boiling Water
Creamy Topping
  • 8 oz Cream Cheese, softened
  • 1/2 cup Powdered Sugar
  • 8 oz Whipped Topping, thawed
  • 1/2 cup Pecans, chopped (optional)

Method
 

Prepare the Salad Base
  1. In a large bowl, dissolve the cherry jello powder in boiling water; stir until fully dissolved.
  2. Stir in the whole cranberry sauce and undrained crushed pineapple; mix well to combine all ingredients.
  3. Pour the mixture into a 9x13 inch baking dish and refrigerate for at least 4 hours, or until firmly set.
Prepare the Topping and Serve
  1. In a separate bowl, beat the softened cream cheese and powdered sugar together until light and fluffy.
  2. Gently fold in the thawed whipped topping and chopped pecans (if using) until just combined.
  3. Spread the creamy topping evenly over the set cranberry jello salad and serve chilled.

For best results, allow ample chilling time to ensure the jello sets properly. You can garnish with extra whipped cream or fresh cranberries before serving.
