Ingredients

For the Crust & Crumble
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 cup Rolled oats
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Unsalted butter (226g), cold and cubed
  • 1 teaspoon Vanilla extract
For the Cranberry Filling
  • 3 cups Fresh or frozen cranberries
  • 1/2 cup Granulated sugar
  • 1/4 cup Orange juice
  • 1 tablespoon Cornstarch

Equipment

  • 9x13 inch baking dish
  • Large mixing bowls
  • Measuring cups and spoons
  • Whisk
  • Spatula

Method

Crust and Filling
  1. In a large bowl, combine flour, sugar, oats, baking powder, and salt; cut in the cold butter and vanilla extract until coarse crumbs form.
  2. Press about two-thirds of the crumb mixture evenly into the bottom of a greased 9x13 inch baking dish.
  3. In a saucepan, combine cranberries, sugar, orange juice, and cornstarch; cook over medium heat, stirring occasionally, until the mixture thickens and cranberries burst.
  4. Pour the cranberry filling evenly over the pressed crust in the baking dish.
Bake
  1. Sprinkle the remaining one-third of the crumb mixture over the cranberry filling.
  2. Bake at 375°F (190°C) for 35-40 minutes, or until the crumble topping is golden brown.
  3. Let the bars cool completely in the dish on a wire rack before cutting into squares and serving.

Notes

For an extra burst of flavor, you can add a hint of orange zest to the cranberry filling. Ensure the bars are completely cooled before cutting to prevent crumbling.
