Crust and Filling
- In a large bowl, combine flour, sugar, oats, baking powder, and salt; cut in the cold butter and vanilla extract until coarse crumbs form.
- Press about two-thirds of the crumb mixture evenly into the bottom of a greased 9x13 inch baking dish.
- In a saucepan, combine cranberries, sugar, orange juice, and cornstarch; cook over medium heat, stirring occasionally, until the mixture thickens and cranberries burst.
- Pour the cranberry filling evenly over the pressed crust in the baking dish.
Bake
- Sprinkle the remaining one-third of the crumb mixture over the cranberry filling.
- Bake at 375°F (190°C) for 35-40 minutes, or until the crumble topping is golden brown.
- Let the bars cool completely in the dish on a wire rack before cutting into squares and serving.
Notes
For an extra burst of flavor, you can add a hint of orange zest to the cranberry filling. Ensure the bars are completely cooled before cutting to prevent crumbling.
