- Combine chicken, broth, tomatoes, mixed vegetables, onion, garlic, Italian seasoning, salt, and pepper in a 6-quart or larger slow cooker.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and easy to shred.
- Remove chicken, shred it with two forks, and return it to the slow cooker.
- Stir in the uncooked pasta during the last 30 minutes of cooking, ensuring it is submerged in the liquid, until it is tender.
- Ladle the hot soup into bowls and garnish with fresh parsley before serving.
Notes
For a creamier soup, stir in 1/2 cup of heavy cream or milk during the last 15 minutes of cooking. You can also add other vegetables like corn or green beans. Serve with crusty bread or a side salad.
