  • 1.5 lbs Chicken breast, boneless, skinless diced
  • 6 cups Chicken broth
  • 14.5 oz Diced tomatoes can, undrained
  • 16 oz Mixed vegetables bag, frozen
  • 1 cup Small pasta uncooked, e.g., ditalini or elbow macaroni
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Dried Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Preparation & Cooking
  1. Combine chicken, broth, tomatoes, mixed vegetables, onion, garlic, Italian seasoning, salt, and pepper in a 6-quart or larger slow cooker.
  2. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and easy to shred.
  3. Remove chicken, shred it with two forks, and return it to the slow cooker.
  4. Stir in the uncooked pasta during the last 30 minutes of cooking, ensuring it is submerged in the liquid, until it is tender.
  5. Ladle the hot soup into bowls and garnish with fresh parsley before serving.

Notes

For a creamier soup, stir in 1/2 cup of heavy cream or milk during the last 15 minutes of cooking. You can also add other vegetables like corn or green beans. Serve with crusty bread or a side salad.
