Preparation
- Preheat oven to 350°F (175°C) and prepare an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
Mixing Wet Ingredients
- In a microwave-safe bowl, melt the butter; then, whisk in both granulated and brown sugars until smooth. Stir in the honey, eggs, and vanilla extract until well combined.
Combining Dry and Wet
- In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
- Pour the batter into the prepared baking pan and spread evenly. Combine the remaining granulated sugar and cinnamon for the topping, then sprinkle it over the batter.
Cooling and Serving
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let the blondies cool completely in the pan before lifting out and cutting into squares.
