Ingredients
  

Wet Ingredients
  • 2 cups cottage cheese Make sure cottage cheese is well-drained
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 whole eggs
Dry Ingredients
  • 3 cups all-purpose flour
  • 1/4 cup sugar For a sweeter variant, add cinnamon or nutmeg
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cottage cheese, milk, melted butter, and eggs. Mix well.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of dough onto a greased baking sheet.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until golden brown.

Notes

These rolls can be served warm with butter and jam, and can be stored in an airtight container for up to 2 days at room temperature or a week in the fridge. For longer storage, they can be frozen for up to 3 months.
