For the Quiche

  • 1 cup 1 cup cottage cheese
  • 2 cups 2 cups fresh spinach or 1 cup frozen, thawed and drained Fresh provides the best flavor.
  • 4 large 4 large eggs
  • 1 cup 1 cup milk Can substitute with low-fat milk.
  • 1 cup 1 cup shredded cheese Cheddar or mozzarella is recommended.
  • to taste Salt and pepper to taste
  • 1/4 teaspoon 1/4 teaspoon nutmeg (optional) Adds a warm flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, and milk; blend until smooth.
  3. Stir in the spinach, shredded cheese, salt, pepper, and nutmeg if using.
  4. Pour the mixture into the prepared pie crust.
Baking
  1. Bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.
  2. Let it cool for a few minutes before slicing and serving.

Notes

Store leftover quiche in the refrigerator for up to 3 days or freeze individual slices for up to 2 months. Customize with ingredients like cooked bacon or vegetables for added flavor.
