Ingredients
  

Casserole Base
  • 1 can Whole Kernel Corn Substitute with fresh or frozen corn
  • 1 can Cream-Style Corn No substitutions necessary
  • 1 cup Sour Cream Greek yogurt can be an alternative
  • 1/2 cup Unsalted Butter Consider olive oil or margarine as alternatives
  • 1 package Corn Muffin Mix Ensure it's gluten-free if needed
Cheese
  • 2 cups Shredded Medium Cheddar Cheese Swap with mozzarella or vegan cheese for variety
  • 1/2 cup Additional Cheese Optional, for sprinkling on top

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the two cans of corn, sour cream, and melted butter.
  3. Stir in the corn muffin mix until combined. Then, fold in 2 cups of shredded cheese.
  4. Pour the mixture into a greased casserole dish.
  5. If desired, sprinkle some additional cheese on top for extra flavor.
Baking
  1. Bake in the preheated oven for about 45 minutes, or until golden brown and set.
  2. Let it cool for a few minutes before serving.

Notes

Serve warm as a side dish. Pairs well with roasted meats and salads. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
