Ingredients
  

For the cookie base
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened Make sure the butter is at room temperature.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips For the cookie dough mix.
For the topping
  • 1 cup chocolate chips For topping.
  • 1/4 cup peanut butter For topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a bowl, mix together the softened butter, brown sugar, and granulated sugar until creamy.
  3. Stir in the vanilla extract and flour until well combined.
  4. Fold in the chocolate chips.
Assembly
  1. Spread the cookie dough mixture evenly into the prepared baking pan.
  2. In a separate bowl, melt the chocolate chips and peanut butter until smooth.
  3. Pour the chocolate-peanut butter mixture over the cookie dough layer and spread evenly.
Cooling
  1. Allow to cool in the refrigerator for about 1 hour before cutting into bars and serving.

Notes

These bars are great served chilled and can be enjoyed plain, or topped with a scoop of vanilla ice cream or chocolate sauce. Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
