Preparation
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a bowl, mix together the softened butter, brown sugar, and granulated sugar until creamy.
- Stir in the vanilla extract and flour until well combined.
- Fold in the chocolate chips.
Assembly
- Spread the cookie dough mixture evenly into the prepared baking pan.
- In a separate bowl, melt the chocolate chips and peanut butter until smooth.
- Pour the chocolate-peanut butter mixture over the cookie dough layer and spread evenly.
Cooling
- Allow to cool in the refrigerator for about 1 hour before cutting into bars and serving.
Notes
These bars are great served chilled and can be enjoyed plain, or topped with a scoop of vanilla ice cream or chocolate sauce. Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
