  • 1 cup quinoa Rinsed before cooking
  • 2 cups water For cooking quinoa
  • 1 cup sweet corn Canned or cooked
  • 1 ripe avocado Diced
  • 1 cup cherry tomatoes Halved
  • 1/4 cup red onion Diced
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • to taste Salt and pepper
Garnish (Optional)
  • Fresh cilantro or parsley For garnish

Method
 

Preparation
  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring water to a boil, add quinoa, and reduce to a simmer. Cook for about 15 minutes or until the quinoa is fluffy and the water has absorbed.
  3. In a large bowl, combine the sweet corn, diced avocado, cherry tomatoes, and red onion.
  4. Once the quinoa has cooled, add it to the bowl of vegetables.
  5. In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour the dressing over the salad and toss gently to combine.
  6. Garnish with fresh cilantro or parsley if desired.
  7. Serve immediately or refrigerate for later.

Notes

Make sure to rinse the quinoa before cooking to remove any bitterness. You can add other vegetables like cucumber or bell peppers to enhance the salad's color and flavor. If you want extra protein, consider adding black beans or chickpeas.
