Ingredients
  

Pasta and Shrimp
  • 8 oz pasta (fusilli or rotini)
  • 1 lb shrimp, peeled and deveined
Fresh Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Method
 

Preparation and Cooking
  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. In a skillet, cook shrimp over medium heat until pink and opaque, about 3-4 minutes.
Mixing Salad
  1. In a large bowl, combine the cooked pasta, shrimp, cherry tomatoes, cucumber, red onion, and parsley.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. Toss gently to combine.
Serving
  1. Serve chilled or at room temperature.

Notes

For added flavor, marinate the shrimp in lemon juice and garlic before cooking. Use whole wheat pasta for a healthier option. Feel free to add other vegetables like bell peppers or olives for variety. Store leftovers in an airtight container in the refrigerator. It will stay fresh for 2-3 days.
