Preparation
- Preheat your oven to 350°F (175°C). Grease a cakesicle mold.
- In a large bowl, combine the grated carrots and shredded coconut.
- In another bowl, whisk together the melted butter, sugar, eggs, and vanilla extract.
- In a separate bowl, mix the flour, baking powder, and salt.
- Gradually combine the wet ingredients with the dry ingredients, mixing until just blended.
- Fold in the carrot and coconut mixture.
- Pour the batter into the cakesicle mold, filling each cavity about 3/4 full.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Let cool completely, then pop the cakesicles out of the mold.
- If desired, dip in melted chocolate and let set before serving.
Notes
Squeeze out excess moisture from the grated carrots to avoid a soggy batter. Add chopped nuts or dried fruits to the batter for extra flavor. Customize the chocolate coating with sprinkles or coconut flakes.
