Cake Batter Ingredients
  • 1 cup grated carrots
  • 1 cup shredded coconut
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Chocolate for coating (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a cakesicle mold.
  2. In a large bowl, combine the grated carrots and shredded coconut.
  3. In another bowl, whisk together the melted butter, sugar, eggs, and vanilla extract.
  4. In a separate bowl, mix the flour, baking powder, and salt.
  5. Gradually combine the wet ingredients with the dry ingredients, mixing until just blended.
  6. Fold in the carrot and coconut mixture.
  7. Pour the batter into the cakesicle mold, filling each cavity about 3/4 full.
  8. Bake for 15-18 minutes or until a toothpick comes out clean.
  9. Let cool completely, then pop the cakesicles out of the mold.
  10. If desired, dip in melted chocolate and let set before serving.

Notes

Squeeze out excess moisture from the grated carrots to avoid a soggy batter. Add chopped nuts or dried fruits to the batter for extra flavor. Customize the chocolate coating with sprinkles or coconut flakes.
